Whole Grain Blueberry Muffins

These are a great way to get whole grain and fruit as well as healthy protein into your morning routine. Warm for a few seconds in the microwave on your way out the door for a quick and easy breakfast or afternoon snack.



Makes 6-8 muffins depending on the muffin tin size



1 cup oatmeal flour, ground in food processor

¼ cup almond flour

3 scoops egg white protein

½ cup water

¼ cup honey

1 teaspoon vanilla

1 teaspoon cinnamon

1 ½ teaspoons baking powder

½ teaspoon baking soda

1 cup fresh blueberries



1. Heat your oven 350 degrees and line a muffin tin. Set aside.

2. In a food processor, add the whole oats. Pulse on high until you have a fine powder. To this, add the almond flour and egg white protein powder. Thoroughly combine.

3. To this, add the water, honey, vanilla, cinnamon, baking powder, and baking soda and thoroughly combine.

4. Gently fold in the blueberries. Spoon out the batter into the lined muffin tin. Bake for 15-20 minutes or until a tooth pick comes out clean.
