Roasted Cauliflower Hummus

Now you can have your dip and eat it too...knowing you have some secret added protein you can't even taste! This is just as tasty as traditional hummus and super easy to make. Use your favorite vegetables to make this an all around perfect snack. 

 

Yield: 

Makes about 3 ½ cups

 

Ingredients: 

1 head cauliflower, cut into florets 

3 tablespoon avocado oil, divided 

¼ cup tahini paste 

¼ cup lemon juice, about 2 medium size lemons 

4-5 garlic cloves

1 teaspoon cumin 

3 scoops Farm to Muscle whey protein powder 

¼ - ½ cup water, to thin to desired consistency 

Salt and pepper 

Paprika, to serve 

 

Directions: 

  1. Heat your oven to 400 degrees and line a sheet pan. Place the cauliflower florets and drizzle with 1-2 tablespoons avocado oil. Place in the oven and roast for 35-40 minutes.
  1. In a food processor add the roasted cauliflower, remaining avocado oil, tahini paste, lemon juice, garlic, cumin, and whey protein powder and pulse until you have a smooth consistency.
  1. One tablespoon at a time add to the cauliflower mixture until you reach your desired consistency. Taste and adjust the seasoning with salt and pepper. 
  1. To serve add a couple sprinkles of Paprika and a drizzle of avocado oil if desired. Serve with carrots and cucumbers or pita bread. Enjoy!
