Peanut Butter Protein Cookies

These little cookies are great for adding to school lunches or a quality snack after school. With only five ingredients, these flavor-packed bites are an easy and delicious way to introduce additional protein into anyone's diet, and the kids can help in the kitchen!


Makes (12) 2 oz. cookies 



½ cup whey protein powder

1 large egg

½ cup granulated sugar

1 cup peanut butter, smooth *You can also try this recipe with other nut butters!*

1 teaspoon vanilla


1. Heat your oven to 350 degrees and line a sheet pan with parchment paper. Set aside.

2. In a medium-sized mixing bowl, add all of the ingredients and thoroughly combine.

3. Using a medium-sized ice cream scoop, scoop out the dough onto the parchment-lined sheet pan. Keep them about an inch or so apart. Repeat until all dough is portioned. Before putting in the oven, take a fork and press down in opposite directions to get the criss-cross effect on top.

4. Bake for 12-14 minutes or until golden-brown. Let them cool for 8-10 minutes before removing. Enjoy!
