Cinnamon Swirl Muffins

A sweet treat that is packed with protein to keep you full either as breakfast on the run or as an after-school snack! Honestly, these taste just as sinful as a snickerdoodle, but are so much more nutritious, and kids have no idea they're getting protein in with that cinnamon-sweetness!

 

Yield: 

Makes 12 muffins

 

Ingredients: 

¼ cup butter, softened

1 cup sugar

2/3 cup sour cream

½ cup applesauce, unsweetened

1 teaspoon vanilla

1 ¼ cups flour

3 scoops whey protein powder

1 teaspoon baking powder

1 teaspoon cinnamon

½ teaspoon baking soda

¼ teaspoon salt

For topping each muffin:

2 tablespoons sugar

1 teaspoon cinnamon

 

Directions:

  1. Heat your oven to 350 degrees and line a muffin pan with liners. Set aside.

  2. In a mixing bowl, cream the butter and sugar together until fully combined. Add in the sour cream, unsweetened applesauce, and vanilla. Thoroughly combine.

  3. In another bowl, add the following dry ingredients–flour, whey protein powder, baking powder, cinnamon, baking soda, and salt. Thoroughly combine.
  1. Slowly combine the dry to the wet ingredients until fully combined. Portion out into the lined muffin pan.
  1. Combine the sugar and cinnamon and sprinkle a bit over each muffin and cut in with the tip of a knife for the swirl. Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center of the muffin. Let cool for 5-8 minutes before eating.
