Cinnamon Swirl Muffins

A sweet treat that is packed with protein to keep you full either as breakfast on the run or as an after-school snack! Honestly, these taste just as sinful as a snickerdoodle, but are so much more nutritious, and kids have no idea they're getting protein in with that cinnamon-sweetness!
Yield:
Makes 12 muffins
Ingredients:
¼ cup butter, softened
1 cup sugar
2/3 cup sour cream
½ cup applesauce, unsweetened
1 teaspoon vanilla
1 ¼ cups flour
3 scoops whey protein powder
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon baking soda
¼ teaspoon salt
For topping each muffin:
2 tablespoons sugar
1 teaspoon cinnamon
Directions:
- Heat your oven to 350 degrees and line a muffin pan with liners. Set aside.
- In a mixing bowl, cream the butter and sugar together until fully combined. Add in the sour cream, unsweetened applesauce, and vanilla. Thoroughly combine.
- In another bowl, add the following dry ingredients–flour, whey protein powder, baking powder, cinnamon, baking soda, and salt. Thoroughly combine.
- Slowly combine the dry to the wet ingredients until fully combined. Portion out into the lined muffin pan.
- Combine the sugar and cinnamon and sprinkle a bit over each muffin and cut in with the tip of a knife for the swirl. Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the center of the muffin. Let cool for 5-8 minutes before eating.
